Goddess Savory Bread Pudding

I realize my passion for food seems to have no end. It is a journey of delectable bite after scrumptious bite for me. It’s a continual search for my want to alter, revise, and luxuriate in it more. Little nibbles at a time… and slowly over the years my passion has become more obsession-like. Searching for the tastiest little bite on the plate… in the fridge… anywhere my fork or fingers will lead me. Bread pudding is a marvelous way to lose oneself. It allows for endless opportunity of tinkering… it’s the lonely pantry’s best friend… and even an empty larder has something for a bread pudding. Magical in its intensity… old-fashioned and familiar. I adore a savory pudding equally to a sweet one… perhaps two pans side by side might tempt me the most… I could just savor a bite from one pan then relish in the other, dragging my fork back and forth. Are you lost in this as I am? Are you salivating at the thought of all this goodness? Inspired to claim your senses right to experience this bountiful thought? When you taste this shamefully decadent bread pudding… you’ll find pleasure to no end. Delightful for any meal, really… a simple salad on the side… oh, blissful day!

GODDESS SAVORY BREAD PUDDING

3 leeks
1 lb. asparagus, trimmed on diagonal into 1 inch pieces
3 Tbsp. butter
1/2 tsp. salt
freshly cracked pepper
1 lb. mushrooms (shiitake, button… whatever you have available to you)
2 cloves of garlic, minced
1 C. freshly grated Parmesan cheese
2 C. freshly grated Gruyere cheese
1 (1 lb.) loaf of French bread, cut into 1 inch cubes (should equal about 10 cups)
1/4 C. balsamic vinegar
1/4 C. dry white wine
6 eggs
2 C. milk
2 C. cream

Preheat oven to 450F. Arrange the bread in a single layer on a baking sheet and bake until browned, 10-14 minutes. Occasionally shift pieces around to ensure browning on all sides. Remove the bread from the oven and let cool. Reduce the oven temperature to 350F once bread is removed from oven.

Heat 1 Tbsp. butter in a large skillet. Saute leeks & garlic until soft; season with a bit of salt. Set aside. Melt another Tbsp. of butter in the pan. Add mushrooms, season with salt and pepper; saute until the mushrooms have released their juices, 5-7 minutes. Continue to cook until the mushrooms begin to brown. Add balsamic vinegar and white wine to pan of mushrooms, cooking to let some of the liquid reduce. Combine mushrooms with leeks and set aside. Cook asparagus in boiling salted water for about 3 minutes or until just tender. Remove from water and plunge into an ice bath to cool. Promptly remove and dry well.

Whisk eggs, milk, cream, 1/2 tsp. salt, 1 tsp. pepper, Gruyere, and Parmesan. Add in mushroom leek mixture, asparagus, and bread. Mix gently but well. Let all ingredients sit for 30-40 minutes, or until bread seems to have absorbed the custard. Pour mixture into a buttered 9×13 pan. Bake uncovered on the middle rack at 350F for about 1 hour and 20 minutes. It should look puffed and nicely browned on top. If it still needs cooking and is getting too brown, put foil over the top. Let bread pudding cool for 10 minutes before serving.

I’ve never heard of savory bread pudding. What a great brunch or shower idea. Your combination sounds perfect, but I’m thinking this would also be good with artichokes, spinach and red bell peppers! Oh yum!

Tracy it is such a delight watching you every morning! I look at Mondays in a whole new way now! I will be trying the bread pudding this week for sure! I love the idea of artichokes, and spinach and peppers…sundried tomatoes would be fun too! I must share that while living overseas we traveled to La Gruyere, Switzerland. It is the most charming little town. And of course…the cheese! I think I could live on bread, cheese and wine! (I do miss my wine being pregnant…)Thank you again Tracy!

Tracy, I Love your blog I am totally obsessed with it. For years I have felt bad about all the stuff I collect, saying do I really need all this stuff. I really love all the things I collect with so much passion it is sometimes crazy. Through your blog I realize that its not bad to love all the things I have. I am really into tea parties and anything about tea. I owned 2 tearooms for 10 years. I am currently writing several cookbooks. The first one that I want to get published is all about bread pudding. I have 120 sweet recipes. When I saw your post this morning I had to tell you how excited I was to see that you also have a passion for it too.You are really a big inspiration for me. Tracy, so here’s my second blog comment ever so I guess I’m hooked now!!! Love the recipe idea, this is all new to me.
I just had to tell you that I spoke in front of 350 people this weekend on the topic Organizing Your Time with Style!!! I had to dress in style so I wore The Age of Elegance Jacket!!! I got so many compliments before my speech that it gave me confidence and eased my nerves. My presentation was a success and anyone that complimented me I immediately told them to go to your website. I thought it was the least I could do since you inspire me so!!!

YUMMY….this version looks soooo good. I do a breakfast type with Italian sausage (could use bacon :) , red pepper, mushroom, green onions, spinach…I have even made it the night before, cover w/plastic wrap and bake in the morning…perfect for weekend guests! Thanks for kicking off my week.

Oh…we had Porter Pot Roast yesterday for dinner with friends…AND Baked Brie (which I just finished off for breakfast!)…both were a HUGE hit with our friends and my boys!!

I love bread pudding too – making a savory one sounds like a perfect idea. This will have to be worked into the repertoire. Like Debbie B., I wore the Age of Elegance jacket a few days ago to a legislative session at the capitol in Denver and received a ton of compliments – I agree, it really does help the confidence level. It is a bit magical – when you are wearing a Tracy Porter piece, you feel like you can do anything!

Fellow Goddess’ I am just catching up… I finally watched Friday’s video. What a delight. I too collect tiny treasures and plates.

I was in NYC yesterday, I could not resist the heat wave. Toasted you-all at the St. Regis. My amazing boyfriend (at this age it sounds silly, does anyone know a better term) got a real laugh when I lifted my glass to my friends at Tracy Porter. Tracy, we had lobster BLT’s with avocado. OMG amazing !!!!

It makes me so happy to know that others enjoy a slice of heaven everyday!!!!! Keep the faith ladies and celebrate, HUGS ! FIFI

Tracy,
I love your genuine passion as you share all the facets of your life with us. You are such a “GIFT” and I agree with everyone who says the first thing every weekday they have to check to see what you are up to. Everything I have purchased from T.P. has been fabulous! I confess I love all the comments by everyone too! I have never chimed in, but I have been there from the get-go. Thanks for reminding all of us that life is meant to be lived to the fullest every day!

PS Several years ago my mom and I had the most wonderful Heirloom Tomato Bread pudding at Tra Vigne in Napa. It was so good that if we hadn’t been in a restaurant, we would have been tempted to lick the plates. Your recipe conjurs up fond memories.

On the topic of “things from Tracy Porter attract tons of compliments,” I have been wearing my Kensington Handbag everywhere I go (now sold out and no wonder, but it’s the one in the enlarged photo of the Charcoal Cardigan…anyone else have one?) I get compliments from people ranging from my father to the lady at the food co-op! I also wore my new Evangeline Oval Ruby Ring out and about, and it attracted rave reviews too! I always let them know where I’m getting such great stuff (even Dad…wish list, right?), and usually they listen and then at the end say, “so what is the website again?” We should all carry around Tracy Porter business cards! :-)

Tracy, I must say, I have only heard of the sweet version of bread pudding. So I was kind of like, ‘WHAAATTT?” when I saw what you were adding into your concoction:) But it looks yummy!!!!!

Also, completely understand about not sending out a catalog this year. Totally makes since. We get a lot out of your website and videos, which by the way… thank you for the videos. I did notice the lower prices and I am so excited. My birthday is creeping around the corner, so I’m thinking that Printemps Dress might be in my future:)

A Warm Hello Tracy AND

Just a quick note to say “Thank You” for NOT doing a catalog this year.

For one thing it is the GREEN thing to do.. So many trees will be saved and that is a very good thing.

Also… I TRULY think that your website does SUCH a better job of showcasing the clothing… close ups from every angle (perfect and SO helpful) .. along with the fashion videos which REALLY show you what the item looks like ON a person… amen! (NO catalog does that!!!)

This, along with the lower and more affordable prices (especially with the way things are in the world)… ALL WORK beautifully.

“Hats Off” to You All for NOT doing a catalog this year. I (really) hope that you choose not to do them in the future. The website is a MUCH ‘friendlier’ way all around.. (from the perspective of nature AND your appreciative friends/customers it is a VERY positive thing!

Tracy, have you thought about doing a Tracy Porter and family cook book? It would be a best seller, for sure. Having a dinner party for Valentines. Six couples. Your punch bowl is all set up. I’m new to the blog and love it. I’d love to see a video tour of your kitchen. The materials you’ve used have resulted in a great look and as someone hoping to do a kitchen remodel in the near future I’d love to hear more about your choices. I must say you are cracking me up when you lick the spoon throughout the recipe and then continue to use it to prepare the meal. I’m telling myself it’s okay because your planning on eating the whole thing yourself!

P.S. I totally agree with Sandi that a no-catalog policy would be great for the environment! The website absolutely delivers in terms of being able to see the items in all their glory. Maybe a beautiful postcard mailing for those who wouldn’t otherwise find the site?

ohhh, yes,, you know me by now…i really can’t cook without a taste..it’s the only way i know how. It’s how i’ve learned…and it is just a natural for me to taste with all of you…… as it is when it’s just our family…i supose you get how very comfy i am with you guys! Don’t you guys taste as you go? My DH John does not….odd to me? Mind you he is quite a remarkable cook…always amazes me…..
Mudrick, our kitchen is very practical, clean and we adore restaraunt supply stores….you could bathe in our sink….( in fact our kids did when babies)….all stainless…everywhere, great for cooking….double ovens, double dishwashers….a pantry that we adore…deep drawers, good for pans..etc..It works well , all of it….we just tried to think about how we live, and function as a family…it’s a pretty busy home, and the kitchen is the center…we have an island and a peninsula, great with kids…counter space is key for me…I like to spread out…..think about how you function….pretty is good, but not if it doesn’t work well for you and the way you need to move about….

This recipe is printed and ready to go. LOVE this version – I, too, did a breakfast type. Tracy – I’ll gladly forgo your catalog for the lower prices. It’s obvious that many of us are grateful for that!!!!! And, these videos are on my daily “must.” TTFN!

Hi Tracy
Wow, I have become such a huge Tracy fan since I discovered “Jolly Ol’ Snowy” out here in LA last christmas! I then looked you up online and discovered the treasure house that is Tracy Porter!! Then I found out you are from and still live in WI…I just LOVE your style and share your website with anyone who will listen!! I’m from Wausau, WI and have two boys myself. What an amazing creative spirit and talented artist you are…I am always inspired. Just wanted to say that I made the Savory BP and used whole grain kalmata olive bread…WOW…so delish and my 3 & 5 yr olds gobbled it up…same with the Cherry Clafoutis. Two wonderful new recipes to add to my repetoire. To imagine that you create all that you do and are able to maintain such a great family lifestyle while remaining in WI is just SO cool! Thanks for your authentic enthusiasm for living out loud!!!

Oh my gosh! I made this delightful savory bread pudding for our Valentine’s dinner…it was amazing!!! I paired it with a salad of spring greens & arugula with tiny mandarin oranges, thin red onion slices and black olives…and a crisp pinot grigio! My husband swooned! (And he is the “good” cook of the family!) I was thinking of experimenting with this recipe in the future…maybe adding oysters or sausage…Thanks for another wonderful recipe! I don’t get a chance to blog often, but rest-assured I visit your site almost daily for a few minutes, just to see what delightful things you’re up to now! Thanks for the inspiration!
