Tracy Porter Swedish Pancakes

TRACY PORTER SWEDISH PANCAKES
3 eggs
1-1/4 C. flour
2-1/4 C. milk
1 Tbsp. sugar
2 Tbsp. melted butter, plus more to cook pancakes in
1 tsp. salt
1/2 tsp. vanilla
Preheat a pan (cast iron or an 8 inch pan) over low / medium heat. Mix eggs and a cup of the milk. Add in dry ingredients. Mix quickly but not for long. Add in the rest of the milk and melted butter; combine well. This is a very thin batter, be sure not to over mix.
Put a generous bit of butter (these do well cooked in a lot of butter) into your hot pan. Once it is melted, pour about 1/4 cup batter into the pan. Let the Swedish pancake cook for about one minute, then flip and cook on other side about one minute (typically for me it is less). Be sure to put butter in the pan each time you cook another pancake.
Serve these gems rolled, as my husband likes them, filled with strawberries and dusted with confectioners’ sugar. I prefer mine folded into quarters, drizzled with melted butter, and then some lingonberry preserves or maple syrup. You can typically find lingonberry preserves at most any grocery store. You could also serve them as our children do (though I would not suggest this in truth, they really sabotage theirs… but alas, who am I to interfere with their creativity?). They make Redi-Whip faces all over theirs, then drown them in maple syrup and chocolate chips. Poor lovely Swedish pancakes… just swimming in a pool of boyhood fantasy. C’est la vie!

Tracy, I laughed out loud when you dipped the bacon in maple syrup. My son is such a picky eater, always was. BUT…the one thing he loved was bacon dipped in syrup. He still does that today! It must be the sweet/salt thing that makes it soooo good.

My Dad fell before Christmas and shattered his hand leading to surgery then to had to be hospitalized again with pneumonia over Christmas. He is doing fair now but is stubborn and won’t let me do much for him.
My Mom called yesterday and she found another lump in her breast and starts chemo next week. This is her third round with cancer after having one breast removed.
Ladies, my loves, PLEASE remember those self exams and mammograms!

Have you tried the maple flavored bacon? My boys do the same thing. The ONLY thing that they allow to touch on their plates is bacon and maple syrup! They love the flavored bacon.
Everytime I fry up some bacon, I think of Miss Tracy and her LOVE LOVE for bacon.
My neighbor is from Sweden and not only do I love her accent, but love her cooking!
We have a new Ikea and I’m going to look there for lingonberry syrup. I’ll bet they carry it.

You are good to remind us women about our self exams and mammograms….This past weekend, my 10 yr. old daughter and I went to the funeral of her friends 41 yr. old mother. She was absolutely beautiful and in the prime of her life with a husband, and two small children. We need to embrace life every minute of the day…

Tracy…you are making me hungry!! Back in the day I used to make crepes all the time. I had a crepe pan, I loved it. I totally agree with you about how the first one flops. What is that about, anyway? I will have to try your recipe. Maple syrup and bacon…yum is all I can say!

Tracy — A restaurant in Door County (Wisconsin) serves these Swedish Pancakes which is one of the main reasons we go to Door County! They are delicious — however, it is my understanding that they bake these pancakes in an oven on a large cookie sheet. What I am trying to say is that they fill up the entire rectangular pan with batter and cook them in the oven. When served they cut it into around 5″ squares and it easily makes a stack — pour on the butter, and when served at the table pour on the syrup, fruit etc. You need to try this method because you can get them out quickly to serve your family practically all at once. However, I don’t know how the top browns but this is something worth experimenting around with. Take care.

So wonderful to begin my day here with you… sharing our joys and challenges with other women who are supportive and positive. LISE and DIANE- hang in there, girlies, 2008 was a long one for my family and illnesses. I spent hours in hospitals and know the long days your are working through – I send a big hug and wish I could buy you a hot coffee then lend an ear! I am also so sorry to hear about the 41 year old Mommy’s passing, my father was 41 when he died of cancer, PAM, you are a wise woman to share the preciousness of life with your daughter – my girls know this, too, from experience. Love and hugs to you ladies… and when you are in your beautiful home, made more lovely by your presence – definitely, Swedish pancakes. Our kids will hold these memories forever. Thank you, TRACY for the true inspiration!
Steve is the pancake man of our house and I make crepes – it’s just a known fact that the first one turns out a mess(crazy!)… not just you, T, I think it is the nature of the beast – oh well, I just eat it! Butter the pan – for sure. Sometimes I feel like the California dairy farm I grew up on is right next to your place in Wisconsin and we are just neighbors swapping ideas and little habits – so fun! Served quinoa and edamame tabbouleh salad to the family on Tuesday night – loved it!

I am a Radiology Manager and have worked on many commitees to educate and encourage women to have their annual mammograms and have seen the difference it can make in a person’s life if a positive finding is diagnosed.
As women, we need to support each other in making sure all women over 40 get that annual screening, it can make such a difference.
Dont’ forget your monthly self-exam….

Love Swedish pancakes, Yummy!!! Both my husband and I are of Scandinavian descent. We have consumed many of these pancakes, but I have yet to make them. I think that will change it sure looks easy enough.

Actually, these Swedish Pancakes are what we call “crepes” in France. They are as thin as yours and are prepared exactly the same way though we let the mix rest a few hours before actually baking it.
And my first “crepe” is also always a mess and I eat it as well.
I love the plate you use to put your folded crepe, I have almost the same to do so.
Anyway, I am going to keep you recipe and try your way to see if there is a difference in the taste.

I love pancakes like that! When I’m at my moms house in Holland they have that kind. I love putting butter on them and rolling them up and then drizzling maple syrup on them… they are so delicious! When I would fly home I would make sure to have a couple of pancake mix… but now I can just use this receipe!

I’ve been making these pancakes since Tracy posted the recipe way back and they are every bit as good as they look. Our family rotates between the swedish pancakes, belgian waffles, and big fluffy pancakes made with ricotta cheese. We love our carbs!
Lena- I am also a size small(4) but ordered the Persian shirt in med because it looked very close fitting and I have a chest,(32D, sorry if that’s TMI) I am so glsd I did, it fits perfectly!

Hello lovely friends!! I love to make breakfast on the weekend for my husband, Brett. It’s a nice time for us to sit down together when we have time to be leisurely. I will definitely be making these pancakes…they look too yummy. And tomorrow, being Friday, is casual day at work and I’m going to wear the mossy sweater and can’t wait to see how many compliments I get on this beauty. So far, I’ve gotten many nice comments on the other TP designs I’ve worn. I truly feel very special when I wear them…thank you Tracy!! The latest additions to the line are so gorgeous…I must save my pennies. Can’t wait for Inspiration Fascination tomorrow!!
DURLS…I went on a safari today: looking for a spot of leopard. I was instructed by someone we all know & love that my powder needed some. I could have been a commercial for Pottery Barn. It was raining crazily and I had no umbrella. I ran in with my jacket over head, adorable shoes soaked through and stated: “I come in rain, sleet or shine. I NEED these towels.” They roared!!! My leopard hand towels have a new home and boy does the cinnabar colored powder room look happy. Here’s to fluffing no matter the weather!

I have a son-in-law from Sweden and he makes the best Swedish pancakes, I will try this receipe since I have never made them. We had the roasted tomato soup for supper and it is to die for. Just the smell of the veggies roasting was yummy all day long. Mammogram scheduled for March 20. Prayers to everyones parents. We are all so lucky health care has advanced so much. Loved the boys all around the counter eating their pancakes. One is more handsome than the next!

I also make swedish pancakes almost every weekend! My kids and I are crazy about them. My husband not so much. I use a swedish pancake pan from Sweden(we used to live there) that is 40-45 years old. It works like a charm – but – the first pancake never turns out perfectly. It never did for my mom and it never has for me. I’m a cheater though, I use the low fat Bisquick mix and add extra milk to thin out the batter. Easy and delicious. We always spread them with lingon, fold them over once and sprinkle with lemon juice and then sugar. One handy little tool I use is an offset spatula. Same shape as yours but the handle is offset. Can’t wait till the weekend.

She also said it’s REAL wool if you are allergic, and of course be sure to wear a shirt under it as it can be itchy-thus, the real lambs wool. I will certainly let you know the result when it arrives. I have long arms and she said the arms on this ARE long. I thought how cute it’d be with jeans. And since I’m sooo cold and a layer of snow has fallen and it’s still snowing…..NOT to mention the great price….I went for it!!:-) I personally like the cut in the front…sort of a V cut…it’s a flattering and slimming cut.

Almost every Saturday morning I indulge by eating sourdough toast with butter and sugar. But not this Saturday.
Yuummmmm! We would put applesauce inside and eat them with sausage links (bacon would be delectable, also)!
Put some rice or dry beans in your powdered sugar shaker – comes out much easier and doesn’t clump.
Hi Tracy and all! i’m new to this blog, but and old TP fan from the start. I’ve been watching the videos and just had to send ya’ll an awesome recipe when I saw her Swedish Pancakes. This is for German Pancakes.
3 eggs
1/2 cup flour
1/4 tsp. salt
1/2 cup milk
2 Tbs. melted butter
2 round cake pans sprayed with PAM
Preheat oven to 450 degrees. Put all ingredients in a blender til thoroughly mixed and pour into pans, about 1/8 to 1/4 inch, covering the bottom of the pan. Bake for about 18 mins. Pancakes will rise higher than a crepe.
When done, pour on more melted butter, sprinkle (generously) with powdered sugar and squeeze a lemon over top! To die for!!! Enjoy!!!
I love reading about you all and, of course, Tracy! She is such an inspiration! I too lost my mom to breast cancer in 2004, but I wouldn’t trade a second of the time I spent caring for her- had to leave my husband home to fend for himself, bless his little heart. I am praying for your mom, Lise.

I just finished breakfast and…gulp…I ate five swedish pancakes! This is giving my favorite comfort food, sourdough toast, a tough run. I ate mine sprinkled with powered sugar and with raspberry jam on the side. Thanks for giving me a new family tradition.
