Thanksgiving Hors d’oeuvres

Loves, this was printed on our blog way back… just wanted to share again as many of you have asked and this is always something I do Thanksgiving weekend……..give her a whirl…she doesn’t disappoint!!

Rumaki Hors d’oeuvres….fast and happy about it!!


I like delicious and fast. I am a girl that likes to wing it, but having said that, planning is essential for me when it comes to having good ingredients on hand. (This is what makes “winging it” work!) Usually I’ll put down thoughts… buzz through some cookbooks to get inspired… think about tastes that I love, and go from there. Sometimes when we have a weekend houseful, I will go for really easy noshing… For instance, I always put out fantastic olives in great little dishessometimes I will warm the olives in the oven at 400 degrees for 10 minutes or so. If it’s summer, my herb garden is wonderful and I’ll put rosemary and thyme on the olives before going in the oven. I will always drizzle them with olive oil and balsamic as well, perhaps even some blue cheese chunks on top. I love to put out big chunks of cheese, Genoa or soppressata salami, and sometimes roasted almonds.


This may make you laugh, but one of my all time favorite appetizers is rumaki. (Very 60’s of me, I know!) I like them because they are instantly gone… we all dive at them! Serve them immediately in a lovely low bowl or a gorgeous tray or platter. My recipe is incredibly simple… I have read way too many recipes for this over the years where people tend to over think it. No need to marinate as others suggest… or use too many ingredients.


RUMAKI


1/2 C. soy sauce
1 C. ketchup
3/4 C. brown sugar
1 tsp minced garlic
2 (4 oz.) can whole water chestnuts, drained
1 package bacon, pieces cut in half lengthwise
skewers or toothpicks


In a shallow bowl, combine the soy sauce, ketchup, garlic, and 1/4 C. brown sugar. Set aside. Warm oven to 400 degrees. Wrap chestnut with bacon, skewer with a toothpick, and dip in remaining brown sugar. Arrange Rumaki on wire rack over shallow roasting pan or sheet cake pan and bake about 30 minutes, or until bacon is crisp. (cover you pan with tin foil first for easy clean up!) Remove from oven and drain off fat. Pour sauce over the skewered pieces (be sure to turn them and fully cover each). Put back into the oven for another 12 minutes. Serve while very warm.


p.s. I also make these with pitted dates stuffed with asiago cheese or chicken livers wrapped in bacon… or as Devils on horseback if you stuff olives or prunes with blue cheese …talk about mouth watering…..!!

Hi Tracy, this is a very addicting hors’ doeuvres – bacon and the water chestnut crunch plus a sweet sauce are all just perfect. When I make this I always have to soak the toothpicks in water for an hour or so before they go in the oven….prevents them from burning. Thanks for sharing this again.

Just wanted to pop in a say hello! I am making stock for my ” do ahead gravy”…( anything I can do ahead makes life simpler, plus then i can enjoy a cocktail with everyone tomorrow afternoon!!!) , my big ol’ turkey has been floating around in an apple cider brine since last night….I am going to make a ginerbread trifle in a little bit.
The gorgeous fire is on, candles lit, xmas music blasting….having my tea, and it is….my favorite outside climate…RAIN!!! gorgeous, lovely healing rain!!
I am grateful for so much everyday, mostly the little things in life that make you smile on a dime. I count many people in my blessings…all of you included. We are here because of each of you. YOU have made a difference in our everyday, thank you so very much.
The house smells like thanksgiving already, and i am just going to take my time, go slowly and enjoy every minute of creating this magical holiday gathering.
Thinking of all of you, sending love and warm wishes for a beautiful holiday …no matter how or who you spend it with…I am with you in spirit!! Thank you for sharing yourselves with us!!!

Tracy, this New England girl had never heard of Rumaki, believe it or not, before you brought it up…I love the idea of incorporating bacon into Thanksgiving!!!

Tracy,
I enjoyed your radio show today. First time listening to it. I am glad you posted your water chestnut and bacon recipe. I added it to my shopping cart and plan to make it tomorrow…two of my favorite items.

Tracy,Cindy encouraged me, in my inperfection (can you imagine???) to put unto paper (in stone!) what I told her this morning. So here goes —– I get on tracyporter.com every night when I get home, its a ritual — if I ever go to detox it will be from TP stuff. I am not alone. my daughter is also a addicted to TP. We call it a TP moment, I am sure you understand.We believe have must be kin to you (we from the South, please overlook kin as it is a compliment).

What I have to tell you, with Cindy’s encouragement to write to you is this: you gave me the courage to dream, and envision my dream of establishing an art therapy camp. Tracy, I work as an inpatient therapist on an adult psych.unit on one of the five best psychiatric hospitals in the U.S.,and I was trained as an art therapist. Psychiatrists do not do therapy; they only do the medicine,(read as prescribe meds. Meds can only do so much), therapy works if you work it. TRACY, after I listened to your radio programs I began to do ART THERAPY with patients. I connected with people that were at the lowest ebb in their lives. Art connects and inspires all of us, inspiration means suck in (breathe deeply)in the life force, reframes purpose and gives hope: think reframe and invention = morph, think death and rebirth; reinvention. Most people are verbally and emotinaly constipated, (imagine holding it ALL IN), think in -out-in – out. there has to be a release or else you blow up or out, both are unpleasant. People who can’t verbalize feelings or emotions express it,(emotion)in art and then (ta-da, angels blowing trumpets,) describe thoughts through drawing —giving voice and validation to their feelings. You gave me my VOICE and courage to do ART Therapy and the hope/dream to start an art therapy camp for women. Tracy,God bless you and your beautiful family, dogs, goat and mini jackass. Can’t wait to see the Spring collection!

PS By the way,since you started your radio programs, and I listened and since then —- I have recieved HIGH PRAISES from the psychiatrists I work with. Glad you love kittens: I aldso grew up on a farm and rescued kittens with runny eyes. Now I* live in a city but did volunteer work for Animal Aid of Tulsa and took home injured/sick cats waiting for adoption and a home they never got. That was years ago and now I joke with my husband about running a geriatric cat house.

Wow, what a funny universe – just read Anne Miller’s comment – this year I studied a diploma in Art Therapy. It has quite simply changed my life. And here we are being inspired by Tracy everyday. Little snippets of what I learn here are woven into my daily life, and it all just comes together in a wonderful way. You are so right Anne – art therapy makes such a huge difference – I’ve experienced it first hand, and hope to continue to help others – what a beautiful gift x
