Steelhead Trout Recipe
A gorgeous meal any day of the week….in a snap! Healthy, tasty as all get out…and if you can’t get the trout…then substitute for another fish. I’m pretty sure you guys will dig this one. Even our kidlings like it! Let me know what you think!!

Steelhead Trout with Smoked Paprika and Cilantro

Steelhead trout is a beautiful tasting fish, a gorgeous fleshy red that has a stronger flavor than rainbow trout. Steelheads migrate to the ocean from freshwater….and then back to fresh water to spawn (mind you they can also be farmed). I find this way of cooking fish to be sort of simple and old fashioned, really quick and practically impossible to ruin. I think the most important piece here is not to overcook the fish, the tough thing about giving exact cook times is that you may find extraordinarily large fillets….which can be common with Steelhead trout. So, if in question with cook times, simply take a knife and quickly open a fillet about midway up the fillet, check to see if your fish is looking cooked and opaque. Once you understand the texture you want, you will add more and more fish to your weekly dinners. It is so fabulous for you…we try to have fish a few times every week. You can easily alter this marinade with white wine instead of the lemon….always good to play around and explore a bit with these things.
Steelhead Trout Recipe
3 Fillet’s Steelhead Trout
Marinade~
1/4 C. chopped Cilantro
1 Garlic Clove minced
2 TBS. Soy Sauce
1/4 C. Olive Oil
One Lemon Squeezed
2 TBS melted Butter
1 1/2 tsp. Smoked Paprika
Kosher salt and freshly ground pepper to taste
Mix all marinade ingredients in a shallow roasting pan, large enough not to overcrowd the fish. Lay the steelhead trout fillets skin side down in pan. Let marinade for about 20 minutes. Set oven on broil with one rack at top level placement and one rack at middle oven placement.
Keep fish in marinade and broil for 5 minutes on top rack. Reduce oven heat to 350 degrees. Place roasting pan on middle rack and continue to roast for another 8-10 minutes approximately. Serve with the marinade spooned over the top. I will typically add a sprinkling of salt and freshly ground pepper at this point…..just my preference.

I made a side of lentils mirepoix as a savory delicious side. These are incredibly tasty, and so easy and healthy. I make a nice big pot so that we have leftovers of them. One of my favorite lunches the next day…a bowl of lentil salad! To see this recipe video click here.

Just watched yesterday’s video today – my in-laws are coming tonight for the week and I have been as busy as a squirrel in November getting the house and my family ready for their stay. I’m letting it be a great opportunity to really clean up and organize before the holidays – eyes up! All those velvet pieces make me want to wrap myself in them and go read a book all week…hmmm…may just have to do that!
But I will do my darndest to tune in on Wednesday for more Tracy goodness – wouldn’t miss it!!

Hey there, Tracy + Durls…..Tracy, how timely of you with today’s blog since I served steelhead trout for dinner just last night!!!….your recipe sounds DIVINE, and I can’t wait to try it…we love both steelhead and rainbow trout, and I’m always looking for new ways to prepare them….last night, I baked the steelhead in foil: sprinkle liberally with Old Bay lemon + herb seasoning, dot with butter, splash of white wine, seal it up, and bake at 375 for about 10 minutes….on the side were orzo with green peas and shaved parmesan and roasted rainbow swiss chard….will definitely make the lentils, too….thanks so much for sharing these yummy recipes!!…cheers and happiness to all!!!….warmly, Kat

we had doors and windows propped open!! Oh what memories. Tracy, I just went back and watched the Lentil Salad video…think I could eat that whole bowl myself. I loved the idea of changing it up a bit and eating in the den/library? where-ever!! I am always cooking salmon (the same way) and this has opened my eyes to a new type of fish ( and I am a Pisces afterall…I love fish..my kids hate the smell of it in the house-oh well)!! I am off to the grocery store in a bit (I have a Whole Foods nearby so I am hoping for the good lentils)!! Happy December………can’t wait to see what is in store for Wednesdays show!! Margie

I purchased some fresh steelhead trout fillets at my local Sam’s Club today and then Goggled steelhead recipes. This is not a common fish in our area and this was our first try at making it. I found this recipe and it sounded good. What a great recipe, restaurant quality and very easy to prepare.
