Tracy Porter Homemade French Fries Recipe Video: Easy Homemade French fries YOU can make!

Oh, I do hope you love homemade French fries as much as I do. My family loves them; my kids love them… and they’re a classic treat that I like to serve for casual entertaining. So entirely easy… a girl has to love a recipe that only calls for three ingredients… summertime bliss!!

As tasty as these French fries are…. They are truly the vehicle for all the dipping options. Have fun with this all-American side… all the sauces, dips, dressings, herbs and saltiness makes them all the finer. Isn’t it time to have your way with some delicious homemade French fries!??!!

Tracy Porter Homemade French Fries Recipe

- 4 large russet potatoes

- Canola oil

- Salt and freshly ground pepper to taste

- Wash potatoes and cut into strips… they can be any size you choose, really (tip: the fatter the strips… the less oil they’ll absorb).

- Set the cut potatoes into a pan of cold water with ice and leave for at least 30 minutes (tip: this simple process helps eliminate some of the starch from the potatoes… crispier… tastier fries)!

- Remove from water and dry completely.

- Heat at least 2 qts. oil in a large heavy pan to 350-375 degrees F. (tip: I love my cast iron skillet…. 3-4 inches of oil works beautifully). Use a thermometer (deep fry; or candy thermometer work great).. to ensure the temperature.

- Place a handful of potato strips carefully into the hot oil and cook until golden brown, approximately 5-7 minutes.

- Remove from the oil using a spider skimmer or tongs. Set fries onto paper towels or a ripped-open paper grocery bag to absorb oil.

- Place remaining potato strips into oil (tip: make sure the oil temperature always comes back up to 350-375 degrees before the next batch goes into the oil)… repeat process….

- Season generously with salt and fresh-ground pepper.

Friday is here and the holiday weekend begins! My favorite cousin’s birthday party is Sunday, her 30th! So, a big family get together in Denver….can’t wait! It’s cool and cloudy/rainy here this a.m. but hoping it clears off later. We had so much fun shopping yesterday.I found some rot iron

OH TRACY~these looks sooo DELICIOUS!!…my boys have been BUGGiNG me to make french fries…and I kept thinking I needed a deep fryer…of course I DONT!!!…I just bought all new cookware (STAINLESS STEEL! YEAH), so I think I will run back to TJ Maxx where a saw cast iron pans for CHEAP…and pick one up..since I KNOW my lovely Mother WILL NOT part with her old one!!! Good morning! So, Day 4 of hubby’s business trip has arrived, and I decided to give Grace and Luke the day off from school – mental health day, you know…so here we are, lounging and reading and enjoying an extra, extra-long Memorial Day weekend.
I replied to several of you Smashing Sisters laaaaaate last night on yesterday’s blog. Do visit me there – I’m the last one! :-)
So, yes – french fries are the best! I make them with Red Palm oil – loaded with CoQ10 and other good stuff…solid at room temp…deep orange in color…find it at Whole Foods and other spots…doesn’t really change the taste of the fries (except to make them a tiny, tiny bit “spicy” maybe), but adds a lot of healthful things. Anyhooo, I’d forgotten about soaking the taters, TRACY – so thanks for the reminder!
CAMEO – so glad you’re loving the Vamps! I knew you would! Will we see photos?

French Fries today, Margarita’s yesterday! Can’t wait for the weekend!! My 22 year old daughter is coming home from college today for the weekend and we are going to enjoy both of these recipes!! Well good morning my friends!!!!!!!! I am going out today for lunch with a dear friend…we shall see if I can handle the food. I am so ready!!!!!!!! Yesterday I went out for a little retail therapy and it did wonders for my mood….Not as much as the Margaritas did for Cameo … but almost!!!!
Darling Cameo have you recovered from your Mexican party?….you did sound a bit too happy!! I was concerned that you were wearing the violet vamps by the pool after the second Margarita….I do hope Violet survived intact!!………… I think a little farm time is just what you need….I have a Green Acres vision in my head…am I right dear?

Good Morning Girls, Yes, KELLY and EMILY, I had a wonderful time yesterday, and am going to spend today inserting my little treasures around the house. Thanks for putting up pics girls….you know I am hopeless about doing that!
TRACY, I just thought of something…..do you have a vent system over your stove? I can’t see anything. In my old house I had my range in the island and had to buy a certain (very expensive) range with a biult in downdraft. It was very annoying because this big vent wall popped up behing my stove when I would cook. Anyhoo…..just wondering…….

Bonjour everyone! It is 9.30 am PST kids are playing together, DH went biking I am in front on a great Tracy’s video and recipe with black coffee and toast with Goat cheese!
After Happy Friday Hamburger here comes the French Fries!
When we moved to the States I could not believe how many things ” had” French in American/ English Language: French Vanilla, French Laundry, French Kiss, French fries… I have no idea where it come from..actually Belgium is the ” Frites” capital not France.
My DH ( was raised near the Belgium border in France) makes French Fries Frites every Saturday, he wants them cut in a special way ( small and thin) and we have a deep fryer.My kids love it, but I am not a big fan of it. But the One Tracy made were very apealing I think big ones are better, I like all the dip you made and of course the Lunch sac are so cute and a great idea! I think this Memorial week end we will make hamburger ( I found great Grass-fed meat farm nearby their meat is to die for),French Fries a la Tracy and Magarita OLE!

Hi Tracy,
This video gives me the opportunity to tell everybody that French fries are actually not French, but Belgian. I was very surprised, the first time I heard of French fries in the US, because in France, everybody knows that originally, French fries come from Belgium. In Belgium, they use French fries with everything, including with mussels. In France, we use them more with steaks, what is the usual stuff we can find in French restaurant, though “steaks” are not originally French (!) Probably English or American…
Anyway, I feel very flattered that everybody think here that fries are French, but they are unfortunately not. It’s true that “French fries” sounds better than “Belgian fries”.
Whatever, it is very good !

LOVES!!! Happy day INDEED!!! Hope you are all well and ready for a sparkling weekend!!….I AM!! No school for the kiddies today so O am hanging out with them! We have been fishing in the pond all morning, FIn caught a gorgeous 8 inch BASS!…!! BEAUTY! We just stocked our pond with fish last year and already really good growth! …lucky for me the boys are FINALLY at the point that they are happy to put on the worm, take off their catch and clean the fish…so I just get a nice bucket of cleaned fish ready for the cast iron pan!!
DAWN…you must get a cast iron pan, they are so inexpensive and fantastic, i do believe my favorite pan i own ( i have mostly my grandmothers, I treasure them!) I will share my favorite peach cobbler that is done in a cast iron pan this summer! ARTIST!! Great news that your are out and about!!…one must live….go sister!!!xoxo……REBECCA, i must try the fries your way…always love new thoughts on food! Yael – your belgian fries story made me think of last summer. We took our 2 teens to Europe for the first time. Ended up in the lovliest little belgian town. We are Canadians so we speak french, but no french there, and no english either. We could make no heads or tails of the menu (all dutch!) but recognized the words waffles and beer – no lie – and so that is what we ate in Belgium on a gorgeous summer day in June… How appropos!

Hope you all have a lovely Memorial Day Weekend – we do not celebrate that up here so am always fascinated!

and (his famous) salsa! One of my old boarders and my trainer are coming over later to chat.
I was going to serve wine and TP’s baked brie,
but this weekend just SCREAMS Margaritas!!!
We’ll have to put on Gipsy Kings and Herb Alpert and the Tijuana Brass to put us in the proper mood! VIRGINA, have you picked up any of those yet? Wish you were here to dance the
Conga in my living room with me!! LOL! Do you guys know about the Ultra Lounge series music mixes? Great old Samba and Bongo tunes, very

I am back from my outing girls!!! It was so wonderful, I ate and did not get sick. Then I shopped for the shampoo Virginia recommended, finding it at Rite Aid after stopping 3 different places…hope I saved you guys the extra trips….Now I am home with 4 new magazines and shall put my feet up and enjoy my kingdom. I love your blog…you inspire every facet of my life and it is incredible to me that you take the time to share it all with us.

BE VERY CAREFUL!!! I blame it all on Herb Albert and the Tijuana Brass…..As a very, very young and impressionable child, my parents would BLAST that music over and over and we (all four kids and mom and dad) would dance like there was NO tomorrow in front of THE MIRROR—an entire wall in the livingroom……it makes for one lifelong member of the very happy and bouncy cheerleader type club!!!!……a few margaritas and be FORE warned!!!!….. :)

What a day!! The beach was wonderful! We packed a lunch and had a fabulous little “date”. Oh if you could have seen me…Steve literally had to heave my big pregnant body out of the beach chair! What a sight! Anyway, now running between baseball games and ballet recitals! TRACY…so glad you are healing and that the boys can put the worms on themselves! Sounds like it’s fish for dinner! Love the french fries!! anything with potatoes is right up my alley. And I love how nothing is ever off limits – everything in moderation, right?! (well as far as food goes, certainly not clothing, shoes and household accessories!!!). Have a safe and fun holiday weekend!

p.s. I would love the tips on sweet potato fries as well because while they are so tasty they are on the limp side, ugh.

Happy Memorial Day Weekend, TECH GUY! ;-) …and ALL.
My husband and I went on a rare date tonite with friends we hadn’t seen in awhile (so lovely)…ANYWAY, for our appetizer, we had Garlic Fries…not with garlic salt or powder, but actual bits of minced garlic rained down on a pile of hot fries! Well, they were pretty fantastic by anyone’s account, I’m sure…but my husband and I happen to be CRAZY over garlic (whenever a recipe calls for garlic, we ignore the called-for amount and just dump it in), so we were beyond pleased!…Will be making Tracy’s fries/wedges (ours were skinny tonite, but I prefer the thicker ones) and dumping garlic on while still hot…Who needs drugs in a world where Garlic and French Fries and Porter Margaritas exist?

OOPS…it’s those MARGARITAS…they get me everytime!!! YUM…but, we were discussing french fries…love em all but, only the real ones..can’t stand frozen ones, can ya’ll? I adore the paper bags…what a fun and creative mom, you are, and how very lucky your adorable boys are and that includes Mr. Margarita Man!! I am sitting on my porch sipping my margarita as i write this ….so what better way to end the day……

It’s late so it’s time for me to say hello again!
TRACY — I love your fishing story! Nothing like worm guts under the nails…on top of the garden dirt…on top of the mulch, etc:) Now they can do their OWN!:)…….I tried the french fries tonight but they didn’t turn out so well:( Maybe I didn’t do enough time with the water?? The oil temp was difficult for me to regulate too and I think it got too hot for a while. I did make sweet potato fries and they were wonderful:) Not to be deterred though…Tommorrow – second attempt!! PS — Where’s SARAH???? HEL-LOOOO??

Oh DESIREE!!! I’m giggling again! My parents partied to Herb Alpert and the TJB too, along with Englebert Humperdink and Sergio Franchi,
Jerry Vale, you name it. I have great memories of that! They’d have friends over and
play cards all day and just blast the music
while us kids would all go off and make forts
or swim or skateboard…..Fun times…..seems so long ago! We love Herb and play him a lot
when WE have friends over to play Tripoley.

Good morning girls! I have to report that I did the french fries last night for dear hubby. We were both too tired to go out for dinner and so I made sandwiches and fries a la Tracy. They were FANTASTIC…in opera…not greasy at all!!!!! They had a baked potato taste with a crunchy outside sort of like a potato skin ( if you’ve eaten those). We concocted several dipping sauces and decided the mayo with added dijon was our favorite. It took them 9 minutes to cook…I timed it so it could be repeated easily. I guess the pan and stove make a difference…I used a stainless steel pan. I have the cast iron but do not like it. Anyhoo just thought I’d report. Did anyone else try this?
Now I am off to my mother’s to enjoy an Arabic feast…grape leaves and all!!!!!

I have just been on your website for the 1st time. I love your style and products, I wanted to order about a dozen things from your sale items. I am a 12-14 (x-large), I don’t know if you don’t cater to this size or if that’s you biggest clientelle, but there was not on single thing I wanted that was “in stock”, so I was disappointed to not order anything.

Must report: The french fries were a huge success with my HUNGRY guys!!! Only, I did not have to refry them!…45 sec in the micro and they were good to go!!! Never underestimate the hunger of two teenage boys after 18 holes of golf!!,…they devoured them while I prepared the rest of our lunch……I’m glad I had them ready!!! Thanks TRACY!!
KELLY,….the four of us played golf together,…I LOVE being able to do this with them!!! They are far better than I am,..and that doesn’t matter. We laugh (mostly at me)and have a great time. I learned a long time ago that if I didn’t learn to LIKE hiking, fishing and golfing then I would be ALONE alot!! It is what we do….and it’s what I can do with them…..so happy and grateful for family time!!!… Thinking of all of you!!! and
TRACY!!! with your brood of boys….so much fun now, but just wait!! It gets even better when they become young men and share so much of themselves with you and admire you and laugh it up with you…..I find myself in awe of their abilities and personalities….it takes my breath away!!…TRULY BLESSED!!!!,….Wishing everyone a Blessed day!!!

Maise darling, it was wonderful to hear from you again…where have you been? Fish and chips are a staple down here on the coast of USA too…love them. Did you know Dave, Gretchen’s husband, is in England right now with a golf tournament. Desiree thinks she knows the golf life but Gretchen could write a book!!!
I hope everyone has had a nice holiday…we have had a rainy one but it didn’t slow anyone down…everyone is so ready for summer to begin.
Cameo darling are you standing on the porch of your farmhouse, wearing a caftan, holding a little yappy dog and directing your sweet hubby with his farm chores? Somehow I cannot see you doing them. Perhaps you and Demi are on the porch rockers talking about life and love….oh to have a daughter close by. Mine will be back in N.C. in 9 days!!!!!!!!!!!!!! This peacock will do some major strutting when she returns!!!!!!
Gretchen and I are redoing her sunporch a la Lynn Von Kersting. Is anyone familiar with her work? Chinese lanterns play a major role.

LADIES and GENTS! We have a new little filly, born this morning at 1:20. She’s ADORABLE, and
healthy…..mom is doing very well, and had a somewhat easy delivery. She’s so exhausted today, as is baby, but she’s a natural…..a very sweet loving first time mom! This was a big surprise…she didn’t show signs gradually over a week or more….it was just NOW!! At 7:15 p.m. she was absolutely normal. We do night check at ten p.m. and that baby was rolling around, mom had milk present on her bag, she was pacing and eliminating constantly.
The owner and I were out there for an hour or more…..then we turned out the lights, turned down the music and left her alone….45 min. later I checked on her and she was laying down groaning in full on labor. Wow, what an experience!! I’ll send pictures tomorrow. Hope everyone had a great weekend!! DESIREE,

Happy Memorial Day all you lovely Americans!

Tracy – Margaritas. Yummy, yummy, yummy. But…. I am a wee bit of a thing – 5 2″, about 105 pounds…. turns out 1 of Uncle Margarita’s margartitas (the Chief was mixing with abandon like he thought he saw John do!) was enough that when I served the stuffed artichokes for supper (thank God I had made them before the drink and they were in the oven during the time we sipped the golden concoctions and watched our hummingbirds) I don’t think I could actually say the word “artichoke” anymore… Watched benjamin button afterwards, which I had to rewind and watch a good portion of the next day as I truly could recall almost nothing. Lesson learned – 1/2 ounce each for Miss Wendy. The Chief appears to have a stronger constitution and went back for seconds and we both declared them the “best ever”! And… loved the artichokes, too!
