Summer noshing...

During the summer months we enjoy dining out on our screen porch almost every night... I swear, John and I make this meal at least once a week, it is that good! The boys absolutely go nuts over it... and the great thing is, it's super simple! A bed of spinach and arugula... grilled chicken breast, marinated or seasoned however you like... ripe red tomatoes... thinly sliced English cucumber... crumbles of feta or blue cheese, whatever tickles your fancy... Pile everything high on a platter, drizzle with olive oil, balsamic vinegar, salt & pepper to taste... and let your family or guests help themselves!! Tres magnifique!

Thank you Tracy! We're going to try this tonight-it looks very yummy and like you said...simple.
I enjoy your blog and have been a fan of yours for a long time. Friends and I were taking a fun road-trip through Wisconsin about 10 years ago and noticed your funky sign near Princeton which led us to your Stonehouse store. We were in heaven and I've been a follower of yours since then.

Thanks Laurie!!
John and I believe in simple , lovely food...summer is so good for this. We have a veggie garden that I work on with the kids ( Fin especially is really into gardening) mind you it's pretty weedy right now...but zucchini , and eggplant are ready now and fabulous.

Tracy, how do you find the time for gardening? My large yard has been a full time job this summer due to lack of rain. I can't imagine trying to keep a garden too. Hats off to you and Fin!

Just thought I'd follow up on this salad. I followed it to a T with the exception of the cucumber which I didn't have on hand. We loved it! It went well with a glass of chardonnay too!! I hope you will share some other easy favorites...thanks again! :)
